For all you cheese lovers, these bites are an indulgent way to love cheese the right way using your air fryer: crispy on the outside and gooey on the inside.

2 large eggs, whisked, divided
2 cups grated mozzarella cheese
2 tbsp grated Parmesan cheese
½ tsp sea salt, divided
½ tsp ground black pepper, divided
¼ cup almond flour
1 tsp garlic powder
¼ tsp dried basil
2 tbsp olive oil
1. In a medium bowl, combine the mozzarella, Parmesan, 1 whisked egg, ¼ teaspoon of salt, and ¼ teaspoon of pepper. Mix well.
2. Roll the mixture into 12 balls, each about 1 tablespoon in size. Place the balls on a plate and freeze for 30 minutes.
3. Set the air fryer temp to 400°F (200°C). Spray the fryer basket with nonstick cooking spray.
4. In a medium bowl, combine the almond flour, garlic powder, basil, the remaining ¼ teaspoon of salt, and the remaining ¼ teaspoon of pepper.
5. Remove the cheese balls from the freezer. Dip the balls in the remaining 1 whisked egg and then in the almond flour mixture.
6. Working in batches, place 6 balls in the fryer basket and brush each one with a little olive oil. Cook until slightly golden, about 4 minutes, flipping halfway through.
7. Remove the cheese bites from the fryer basket and allow to cool for 2 minutes before serving.
Tip Store the cooked bites in the fridge for up to 4 days or in the freezer for up to 1 month, although they’re best frozen uncooked.
