Roasted “Potatoes”

Potatoes have too many carbs for a strict keto diet, but you’ll be surprised by how roasted radishes are similar in look and taste to a good old roasted potato.

MAKES 1 cup

SERVING SIZE ½ cup

7 large radishes, leaves trimmed

2 tbsp olive oil

½ tsp sea salt

¼ tsp ground black pepper

1 large sprig of rosemary

1. Set the air fryer temp to 360°F (180°C).

2. Quarter the radishes into wedges. In a medium bowl, combine the radishes, olive oil, salt, and pepper. Mix well. Place the radishes and rosemary on a baking pan.

3. Place the pan in the fryer basket and cook until the skins begin to turn crispy and the insides are soft, about 18 minutes. The radishes are done when fork tender.

4. Remove the pan from the fryer basket and discard the rosemary before serving.

Tips Get creative with the herbs you add to these roasted radishes. Thyme, parsley, oregano, or basil are all great. Mint or chives can also offer a wonderful flavor addition. Store the cooked radishes in an airtight container in the fridge for up to 4 days, but they’re best served fresh.
