Zucchini Fries

Zucchini fries can be tricky to get right using an oven, but thanks to the air fryer’s powerful capabilities, these are super crispy, delicious, and craveable.

1 large zucchini

1 large egg

¼ cup grated Parmesan cheese

¼ tsp sea salt, plus more

¼ tsp ground black pepper, plus more

1. Set the air fryer temp to 400°F (200°C). Spray the fryer basket with nonstick cooking spray.

2. Cut the zucchini into 2½-inch-long (6.25cm) strips. Place these strips on a plate lined with paper towels and press over the top with additional paper towels to remove all the excess liquid from the zucchini. Try to get them as dry as possible.

3. In a small bowl, whisk the egg. In a separate small bowl, combine the Parmesan, salt, and pepper. Dip the zucchini in the egg and then in the Parmesan mixture. Ensure to coat evenly.

4. Working in batches, place half the zucchini strips in the fryer basket and cook until golden on the outside, about 5 minutes, flipping halfway through.

5. Remove the fries from the fryer basket and allow to cool for 2 minutes. Season with more salt and pepper before serving.

Tips Pair this with a steak and a side salad or simply dip the fries in a sugar-free tomato sauce. These fries are best served fresh.
