How can you go wrong with toasty bread and melty cheese? This version adds some lean protein and tangy pickles to take a classic to the next level!

Makes: 1 serving
Serving size: 1 sandwich
2 tsp softened butter
2 slices whole grain bread
2 slices cheddar cheese
2 slices deli turkey breast
2 tbsp chopped dill pickles
Spread 1 teaspoon of the butter over one side of each slice of bread.
Flip one slice of bread over and top with one slice of cheese, the turkey breast, pickles, and the remaining slice of cheese. Top the sandwich with the remaining slice of bread, making sure the buttered side is on the outside of the sandwich.
Preheat a large nonstick skillet over medium heat. Use a spatula to place the sandwich in the hot skillet and cook for 3 to 4 minutes per side, pressing down gently with the spatula, until the cheese is melted and the bread is golden brown.
Transfer to a plate and serve warm or wrap it up in aluminum foil and take it to go.

If desired, you can substitute an equal amount of chopped sweet pickles for the dill pickles.
