English Muffin Pizzas

Next time you’re craving pizza, pop a few of these in the oven; you’ll be getting whole grains, calcium, and protein, and also keeping the portions and calories under control. Plus, they’ll be ready long before the pizza guy could ever deliver!

Makes: 3 servings

Serving size: 2 pizzas

3 whole wheat English muffins, sliced in half

½ cup marinara sauce

1 cup shredded part-skim mozzarella cheese

1 tsp dried oregano (optional)

  1. Preheat the oven to 375°F (190°C).
  2. Place the English muffins, cut sides up, on a large cookie sheet.
  3. Top each muffin with a heaping spoonful of the marinara. Evenly divide the cheese over each muffin, then sprinkle the oregano over the top, if using.
  4. Bake for 12 to 14 minutes or until the cheese is melted and bubbly.
  5. Allow to cool for 5 minutes before serving. Store in the fridge for up to 3 days.

{TIP}

If you don’t have access to an oven, these also can be made in a toaster oven.
