INGREDIENTS
4 medium pears, cored, seeded, and quartered
1 medium lemon, seeded and white pith removed
4 large stalks celery
3 cups arugula
METHOD
1 Process pears, lemon, celery, and arugula through a juicer, or purée in a blender. If blending, strain into a small bowl by squeezing pulp through four layers of cheesecloth.
2 Serve juice immediately.
