This deliciously messy classic isn’t just for kids! This version reduces the sodium to half of what is typically found in store-bought sloppy joe sauces.

1lb (450g) 90% lean ground beef
1⁄4 tsp kosher salt
1⁄4 tsp freshly ground black pepper
1 tsp ground cumin
1⁄4 cup ketchup
1⁄4 cup light brown sugar
1 tsp reduced-sodium soy sauce
1 plum tomato, diced
3 whole-grain rolls, split into halves
2 cups fresh baby spinach
1⁄2 cup shredded Monterey Jack cheese
1. Select Sauté, and add the ground beef to the inner pot. Sauté for 2–3 minutes, or until the beef is lightly browned.
2. Add the kosher salt, pepper, cumin, ketchup, brown sugar, and soy sauce to the pot. Sauté for an additional 3 minutes, and then stir in the diced tomato.
3. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 5 minutes. When the cook time is complete, quick release the pressure, remove the lid, and stir well.
4. Arrange the rolls, open sides up, on a large serving platter. Top each roll with 1⁄3 cup of the baby spinach and 3⁄4 cup of the sloppy joe filling, and then sprinkle 1 tablespoon of Monterey Jack over top of each roll. Serve warm.
