What’s all the Fuss?

A traditional pressure cooker is a wonderful kitchen tool to own. It can render tough cuts of meat tender and cook vegetables perfectly—all in a fraction of the time it takes with other methods and appliances. But if you’ve ever been around a traditional pressure cooker, a few things quickly become apparent: there’s a whole lot of noise, and there’s also a lingering feeling that the top could blow at any moment.

Well, the Instant Pot isn’t your grandmother’s pressure cooker—it’s different, and it’s more. It’s a multi-purpose appliance that, in addition to pressure cooking, can bake, sauté, steam, slow cook, and even function as a rice cooker and yogurt maker. There’s no rattling pressure regulator on top of the cooker—it’s quiet, and it includes a number of pre-set cooking programs that are each designed and precision-tuned to cook specific types of foods to exact times and temperatures. Remember when you had to sauté food prior to placing it in a slow cooker? You can sauté food right in the Instant Pot. And that slow cooker? You’ll no longer need it, because the Instant Pot is also a fully functional slow cooker. The Instant Pot serves as an excellent rice cooker, as well, and it’s the perfect yogurt maker. The pre-set programs enable you to cook nearly any type of food. (You can even bake a cake!) And if you’re a home canner, the Instant Pot is the perfect home-canning appliance for sterilizing and pressurizing. You can even use it as a food warmer.

There is a bit of a learning curve to mastering the Instant Pot, but after a quick orientation and a few recipes, you’ll be thrilled with how this unique appliance transforms your cooking, and you’ll find that you no longer need so many other appliances in your kitchen.

Why else does the Instant Pot belong in your kitchen? Here are a few more good reasons.

It cooks fast
The Instant Pot cooks faster than other forms of cooking, and it does it better. Pressure cooking creates an environment that cooks food quickly and evenly. Cooking this way is faster than conventional methods, and in many instances the cooking times in the Instant Pot are half of those of other methods.

It cooks healthier
The longer food is cooked, the more nutrients can be lost in the cooking process. The high heat, rapid cooking times, and pressurization of pressure cooking help retain more nutrients in the foods you cook.

It’s energy efficient
Because you’re using fewer burners on a stove, and taking less time to prepare your food, you’re also using less energy. As a general rule, the Instant Pot uses significantly less energy than many common appliances.

A variety of models

The Instant Pot comes in a variety of models including the Duo, Duo Plus, Lux, Ultra, Smart, and Max, and they come in a variety of sizes, with the most popular sizes being the 6- and 8-quart models, as well as a smaller 3-quart model. (The recipes in this book were made using the 6-quart Instant Pot Duo 60.)

Note that depending on which model you own, you may notice some subtle differences in the organization of the controls, as well as the names of some of the programs. Some older models may have a Manual program button, which is the equivalent of the Pressure Cook button on most newer models. Some older models may also have a Start button, while the programs on newer models may start automatically, with programs beginning 10 seconds after the program has been selected.
