4lbs (1.8kg) apples (Fuji, McIntosh or Gala varieties), cored and roughly chopped
1⁄2 cup water
1 tsp ground cinnamon
1. Combine the apples and water in the inner pot.
2. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 10 minutes. When the cook time is complete, allow the pressure to release naturally (about 10 minutes).
3. Remove the lid and add the cinnamon. Using an immersion blender, purée the applesauce until no chunks remain and a smooth consistency is achieved.
4. Transfer to sealable containers and allow to cool completely. Once cooled, seal tightly and store in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
