Zucchini Blast
with bok choy & Lemon

This is a savory burst of green goodness to help curb cravings between meals. Bok choy is a mild Chinese cabbage that in this smoothie provides just the right amount of bite.

 

12 zucchini

1 small head baby bok choy, trimmed and roughly chopped

juice of 1 lemon

  1. 1 In a blender, combine 1 cup water, zucchini, bok choy, lemon juice, and as many ice cubes as needed. Blend on high speed until smooth.
  2. 2 Pour the mixture into two chilled glasses and serve immediately.
