1⁄3 cup unsweetened flaked coconut
11⁄2 cups unsweetened coconut milk
1⁄4 cup dried goji berries
2 medium frozen bananas
1 In a dry pan on the stovetop on medium heat, place coconut flakes and toast until fragrant, about 2 to 3 minutes. Remove the pan from the heat, allow coconut flakes to cool slightly, and reserve 2 tsp for garnishing.
2 In a blender, combine coconut milk, goji berries, bananas, and the remaining toasted coconut. Blend on high speed until smooth.
3 Pour the mixture into two chilled glasses, sprinkle the reserved coconut flakes on top, and serve immediately.
