Goji berries & bananas
with coconut

One ounce of goji berries contains almost 150% of your daily vitamin A needs. Their sweet but tart flavor is the perfect complement to toasted coconut and frozen bananas.

 

13 cup unsweetened flaked coconut

112 cups unsweetened coconut milk

14 cup dried goji berries

2 medium frozen bananas

  1. 1 In a dry pan on the stovetop on medium heat, place coconut flakes and toast until fragrant, about 2 to 3 minutes. Remove the pan from the heat, allow coconut flakes to cool slightly, and reserve 2 tsp for garnishing.
  2. 2 In a blender, combine coconut milk, goji berries, bananas, and the remaining toasted coconut. Blend on high speed until smooth.
  3. 3 Pour the mixture into two chilled glasses, sprinkle the reserved coconut flakes on top, and serve immediately.
