Enjoy this thick, spoonable blend of tropical superfoods topped with crunchy nuts and seeds (more superfoods!). This version uses freezer packs of unsweetened açaí purée.
1⁄2 pack frozen açaí purée
1 cup frozen pineapple
1⁄3 cup soy milk
1 tbsp chia seeds
2 tbsp chopped walnuts
1 Place açaí purée packet in a small bowl, cover with warm water, and let sit for 1 minute. This helps with blending the açaí.
2 In a blender, combine thawed açaí purée, pineapple, and soy milk. Blend on high speed for 20 seconds, stop the blender, and stir. Repeat until smooth.
3 Pour the mixture into a medium bowl, sprinkle chia seeds and walnuts on top, and serve immediately.
