2 cups fresh pineapple
11⁄2 cups coconut water
1⁄2 cup low-fat cottage cheese
1 Preheat your oven to broil. Place pineapple in a broiler-safe pan and broil until bubbly, about 5 minutes. Remove pineapple from the pan and set aside to cool for 2 to 3 minutes.
2 In a blender, combine cooled broiled pineapple, coconut water, cottage cheese, and as many ice cubes as needed. Blend on high speed until smooth.
3 Pour the mixture into two chilled glasses and serve immediately.
