Adding a little heat to fresh raspberries releases the natural sugars and brings out their flavor. This smoothie will remind you of a (much healthier) version of a crème brûlée.
1⁄2 pint fresh raspberries
1 tbsp light brown sugar
11⁄2 cups low-fat milk
1 tbsp light cream cheese
1 Preheat your oven to broil. Place raspberries in a broiler-safe pan, sprinkle with brown sugar, and broil until sugar is melted and raspberries are slightly charred, about 2 to 3 minutes. Remove the pan from the oven and set aside for 2 to 3 minutes to allow raspberries to cool.
2 In a blender, combine carmelized raspberries, milk, cream cheese, and as many ice cubes as needed. Blend on high speed until smooth.
3 Pour the mixture into two chilled glasses and serve immediately.
