Granola adds a satisfying crunch to this antioxidant-rich smoothie that’s bursting with mixed berries and sweetened by honey. Add a little water if this smoothie seems too thick.
2 cups unsweetened soy milk
2 cups frozen mixed berries
1 tbsp honey
4 tbsp granola, divided
1 In a blender, combine soy milk, berries, and honey. Blend on high speed until smooth.
2 Add 3 tbsp granola and blend again on high speed until combined, leaving some texture.
3 Pour the mixture into two chilled glasses, sprinkle the remaining 1 tbsp granola on top, and serve immediately.
