Strawberry delight
with rhubarb & honey

This seasonal treasure has a tangy flare that’s the perfect complement to sun-sweet strawberries. This smoothie is also an excellent source of vitamin C.

 

1 small stalk rhubarb, finely chopped

1 tbsp honey

2 cups frozen strawberries

12 cup low-fat strawberry yogurt

  1. 1 Place rhubarb and honey in a microwave-safe bowl. Cook on high for 2 minutes. Set aside to cool for 2 to 3 minutes.
  2. 2 In a blender, combine 1 cup water, cooled rhubarb, strawberries, and yogurt. Blend on high speed until smooth, adding more water a little at a time as needed.
  3. 3 Pour the mixture into two chilled glasses and serve immediately.
