with a splash of lemon

This is a glass of pure refreshment that features the antioxidant lycopene–a plant-based substance that might help protect against heart disease and certain types of cancer.

 

2 plum tomatoes, stems removed

2 tbsp chopped basil

1 tbsp freshly squeezed lemon juice

  1. 1 In a blender, combine 1 cup water, tomatoes, basil, lemon, and a pinch of kosher salt. Blend on high speed until smooth,
  2. 2 Pour the mixture into two chilled glasses and serve immediately.
