Apricot Horchata
with cinnamon

This is a fresh spin on a classic, hacked by using rice flour instead of soaking dry grains overnight. Apricots, cinnamon, and a little honey add the perfect elements of sweetness.

 

2 cups low-fat milk

14 cup rice flour

4 dried apricots

1 tsp cinnamon, plus extra for garnish

2 tsp honey

  1. 1 In a blender, combine milk, rice flour, apricots, cinnamon, honey, and as many ice cubes as needed. Blend on high speed until smooth.
  2. 2 Pour the mixture into two chilled glasses, sprinkle additional cinnamon on top, and serve immediately.
