Named after the 19th-century Italian composer Gioachino Rossini, this strawberry alternative to the peach Bellini is so popular, it has become a classic in its own right. It makes a great celebration drink for the holiday season or New Year’s Eve.
The strawberry purée gives this cocktail a striking red color.
1. Put ice into a mixing glass.
2. Add 4/5 fl oz (25ml) strawberry purée and top with 31/2 fl oz (100ml) Prosecco.
3. Stir slowly for 15 seconds.
4. Strain into a Champagne flute.
5. Top with extra Prosecco, if necessary.

Garnish: For a bit of festive flair, rim the glass with sugar and edible glitter.
