A nod to the Ernest Hemingway book of the same name, this drink was created by the author himself while he was vacationing in the Florida Keys in the 1930s. The cocktail combines two of his great loves—absinthe and Champagne. Simple but powerful, there’s a reason Hemingway named the drink after this particular book!

the CLASSIC RECIPE

This is an intense aperitif for more adventurous drinkers.

1. Place a sugar cube at the bottom of a small Champagne flute.

2. Add 1/2 fl oz (15ml) absinthe.

3. Slowly top with Champagne.
