CHICKEN MUSHROOM MARSALA

Juicy seared chicken thighs are smothered in a rich and flavorful Marsala wine mushroom sauce in this low-carb, gluten-free, keto version of the classic Italian dish.


112lbs (680g) boneless, skinless chicken thighs

12 tsp fine grind sea salt

18 tsp ground black pepper

1 tbsp avocado oil

23 cup chicken broth

2 tbsp unsalted butter, divided

12 tsp arrowroot powder

3 garlic cloves, minced

1 cup sliced fresh mushrooms

1 tsp tamari sauce

13 cup Marsala wine

1 Season the chicken thighs with the sea salt and black pepper.

2 Select Sauté (Normal) and add the avocado oil to the inner pot. Once the oil is hot, add the chicken thighs and sear for 4 minutes per side or until browned. Pour the chicken broth over the chicken thighs.

3 Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High) and set the cook time for 8 minutes.

4 When the cook time is complete, allow the pressure to release naturally for 5 minutes and then quick release the remaining pressure. Open the lid and transfer the chicken to a plate. Set aside.

5 Carefully remove the inner pot from the base. Drain, rinse, and wipe dry with a paper towel, and then return the pot to the base.

6 Add 1 tbsp butter and the arrowroot powder to a small bowl. Using a fork, mash the arrowroot powder into the butter until the ingredients are thoroughly combined. Set aside.

7 Select Sauté (More) and add the remaining butter to pot. Once the butter is melted, add the garlic, mushrooms, and tamari sauce. Sauté for 3 minutes or until the mushrooms soften and begin to brown.

8 Add the wine to the pot and continue sautéing for 3 additional minutes, stirring continuously. Once the sauce is bubbling, add the arrowroot-butter mixture and stir. Continue cooking, stirring continuously, for 1–2 minutes or until the sauce begins to thicken.

9 Add the chicken thighs back to the pot and spoon the sauce over the chicken. Allow the chicken to cook for 3 additional minutes and then press Cancel to turn off the pot.

10 Use a large spoon to transfer the chicken and sauce to serving plates. Serve hot.

tip Arrowroot powder is added to thicken the sauce. It can be omitted from the recipe, but the sauce will be thinner.
