ZESTY LEMON PEPPER BROCCOLI

This simple, low-carb, nutrient-dense side features tender broccoli steamed perfectly and quickly in the Instant Pot and accented with a tangy and lively lemon pepper butter sauce.


2 cups fresh broccoli florets

2 tbsp butter

112 tsp lemon juice

12 tsp freshly grated lemon zest

14 tsp fine grind sea salt

14 tsp ground black pepper

1 Place the steam rack in the inner pot and add 1 cup water to the bottom of the pot. Add the broccoli florets.

2 Cover, lock the lid, and flip the steam release handle to the sealing position. Select Steam (High) and set the cook time for 2 minutes. When the cook time is complete, quick release the pressure.

3 Open the lid and transfer the broccoli to a small bowl. Set aside.

4 Carefully remove the steam rack from the pot, drain and wipe dry with a paper towel, and then return the pot to the base.

5 Select Sauté (Normal). Once the inner pot becomes hot, add the butter. Once the butter is melted, add the lemon juice and lemon zest. Stir lightly, just until the ingredients are combined.

6 Add the broccoli florets to the pot. Gently toss to coat with the lemon butter sauce.

7 Transfer the broccoli and sauce to a medium serving bowl and season with the sea salt and black pepper. Serve hot.

tip Always use the quick pressure release method when cooking vegetables in the Instant Pot. Allowing the pressure to release naturally can result in many vegetables becoming overcooked and mushy.
