My brother Mike has four boys who are picky eaters and dislike “healthy” foods. These waffles allow him to feed them nutritious ingredients—like eggs and whole-wheat flour—to help them grow and compete. They have usable carbs, fiber, and protein—but go easy on the maple syrup!

MIKE’S DIRTY WAFFLES

Makes: 6 servings

Serving size: 1 waffle

Prep time: 5 minutes

Cook time: 10 minutes

 

INGREDIENTS

2 cups whole-wheat flour

1 tbsp baking powder

12 tsp ground cinnamon

14 tsp salt

2 large eggs, at room temperature

6 tbsp unsalted butter, melted and slightly cooled

2 tbsp packed light brown sugar

134 cups buttermilk

1 tsp pure vanilla extract

DIRECTIONS

1 Preheat the waffle maker to medium-high heat.

2 In a bowl, whisk together the flour, baking powder, cinnamon, and salt.

3 In a separate bowl, whisk together the eggs, butter, brown sugar, buttermilk, and vanilla. Pour the wet ingredients into the dry ingredients and whisk until well combined and no large lumps remain.

4 Pour 13 cup of the batter into each well of the waffle maker (or less if your waffle maker is on the smaller side) and close the lid. Cook the waffle until golden and crisp, about 5 to 6 minutes. Repeat this process with the remaining batter to make 6 total waffles.

5 Remove the waffles from the waffle maker, top with your favorite toppings, and serve immediately.

PREP TIP

Add 4 tablespoons of flax seeds to the mix to add some healthy omega-3 fatty acids.
