Broccolini is a hybrid of broccoli and gai lan (Chinese broccoli) that looks and tastes a little like asparagus despite not being related to that veggie. Pine nuts have a nutty and almost buttery texture, which pairs brilliantly with the bitter and somewhat sweet flavor of the broccolini.

BROCCOLINI & PINE NUTS

Makes: 2 servings

Serving size: 3oz (85g)

Cook time: 15 minutes

 

INGREDIENTS

6oz (170g) broccolini

2 tsp extra virgin olive oil

pinch of red pepper flakes

sea salt and freshly ground black pepper

2 small garlic cloves, minced

1 tbsp pine nuts

1 tbsp shredded Parmesan cheese

DIRECTIONS

1 Preheat the oven to 400°F (204°C). Spray a baking dish with nonstick cooking spray.

2 In a bowl, combine the broccolini, olive oil, and red pepper flakes. Season with salt and pepper, tossing to coat. Place the broccolini in the baking dish and roast until fork tender, about 10 to 12 minutes.

3 Remove the dish from the oven and add the garlic, gently mixing to coat. Place the dish back into the oven and cook for 2 minutes more.

4 In a frying pan on the stovetop over medium heat, toast the pine nuts until golden, about 3 minutes, stirring frequently or shaking the pan. (Keep an eye on the pan at all times. Don’t let the nuts be stationary for too long. Otherwise, they’ll toast unevenly and might burn.)

5 Remove the broccolini from the oven, sprinkle the pine nuts and cheese over the top, and serve immediately.
