Egg & Cheese Bagel Sandwich

Think you don’t have time for a healthy breakfast? Eggs contain the high-quality protein that your muscles crave! Simply cook them in the microwave, toss them on a bagel, and take your breakfast to go.

Makes: 1 serving

Serving size: 1 sandwich

2 large eggs

Pinch of salt

Pinch of black pepper

3 tbsp low-fat shredded cheddar cheese

1 bagel (any variety), sliced and toasted

  1. Place the eggs in a microwave-safe bowl. Whisk with a fork and season with the salt and black pepper.
  2. Microwave on high for 45 seconds and then scramble gently and top with the cheese.
  3. Microwave for an additional 20 seconds or until the eggs are set and the cheese is melted.
  4. Place the egg on the bagel. Enjoy promptly or wrap in aluminum foil and store in the fridge for up to 1 day.

{TIP}

If desired, you can add baby spinach, chopped tomato, broccoli, or deli ham to your sandwich.
