French Toast Roll-Ups

You’d be shocked at how many calories are in an order of stuffed French toast at your favorite breakfast chain—like over 800 calories shocked! This healthier spin is just as craveable, but also more sensible. (This is delicious served with a pile of fresh berries.)

PER SERVING 355 CALORIES      TOTAL TIME 20 MINUTES     GROCERIES 6 INGREDIENTS

Makes: 4 servings

Serving size: 2 roll-ups

2 large eggs

½ cup low-fat (1%) milk

Pinch of kosher salt

8 slices whole wheat or cinnamon raisin bread, crusts removed

4 tbsp whipped cream cheese

½ cup maple syrup

  1. In a medium bowl, whisk the eggs, milk, and kosher salt. Set aside.
  2. Using a rolling pin or the bottom of a pan, flatten the bread slices. Spread ½ tablespoon of the cream cheese over a slice of the bread and then roll it up. Repeat for the remaining slices.
  3. Spray a large nonstick skillet with nonstick cooking spray and preheat over medium heat. (If you don’t have a nonstick pan, toss in a pat of butter.)
  4. Dip the roll-ups in the egg mixture and transfer to the hot skillet. Cook for 1 about 1 minute per side, for a total of 4 to 5 minutes. Repeat with the remaining roll-ups.
  5. Drizzle the maple syrup over the top or serve on the side for dipping.

{TIP}

For an extra hint of flavor, add some freshly grated orange zest to the egg mixture.

Don’t care for cream cheese? Swap it out for peanut butter.
