Bobcat Burger

At Quinnipiac University we bleed blue and gold, so this burger is my ode to our beloved mascot (the bobcat) and is adorned with flavorful blue and gold toppings! Lean ground beef and whole-grain rolls make for a healthier burger that any college student can enjoy.

PER SERVING 498 CALORIES     TOTAL TIME 20 MINUTES     GROCERIES 7 INGREDIENTS

Makes: 1 serving

Serving size: 1 burger

1lb (450g) 90%-lean ground beef

1 tsp kosher salt

½ tsp black pepper

4 slices cheddar cheese

4 whole grain hamburger rolls

About 20 blue potato chips (I like Terra Blues brand)

¼ cup pickled jarred banana peppers

  1. Form the ground beef into 4 equal-sized patties. Season with the kosher salt and black pepper.
  2. Preheat a large nonstick skillet over medium-high heat. Add the burgers and cook for 4 to 5 minutes per side, then place the cheese slices on top of the patties and cook for 1 more minute or until the cheese is slightly melted.
  3. Transfer the burgers to the rolls and top with 4 to 5 potato chips and the banana peppers. Top with any desired condiments and serve promptly. Store the burger patties in the fridge for up to 4 days.

{TIP}

If you can’t find blue potato chips, any plain potato chip variety will work.
