Less expensive and healthier than anything from a sandwich shop, this hot grilled sandwich will give you plenty of energy to power through your afternoon.

Makes: 1 serving
Serving size: 1 sandwich
1 tsp sriracha sauce
2 tsp mayonnaise
2 slices whole grain bread
2 slices Swiss cheese
2oz (55g) deli-sliced turkey breast
In a small bowl, mix the sriracha and mayonnaise. Spread the mixture over each slice of bread.
Build the sandwich by layering on one piece of cheese, followed by the turkey, and then the remaining slice of cheese.
Spray a large nonstick skillet with nonstick cooking spray and place it over medium heat. Place the sandwich in the skillet and cook until the cheese is slightly melted and the bread is lightly toasted, flipping the sandwich halfway through the cooking.
Cut the sandwich in half and serve promptly or wrap in aluminum foil and take it to go.

If desired, you can substitute grilled chicken or roast beef for the turkey.
