Taco Night!

These easy flexitarian-inspired tacos use a combination of lean ground beef and black beans for plenty of protein and a boost of fiber. Black beans are super affordable, so their addition allows you to get more tacos from just one pound of meat.

Makes: 6 servings

Serving size: 2 tacos

1lb (450g) 90%-lean ground beef

½ tsp kosher salt

2 tbsp taco seasoning

2 tbsp water

15oz (420g) can black beans, rinsed and drained

12 (6-inch [15.25cm]) corn tortillas

1 cup pico de gallo

  1. Preheat a large skillet over medium-high heat.
  2. Add the ground beef and season with the kosher salt. Cook for 3 to 4 minutes or until the meat begins to brown.
  3. Add the taco seasoning and water. Continue cooking, stirring frequently, until the meat is cooked through. Add the beans and cook for an additional 5 minutes.
  4. Wrap the tortillas in damp paper towels and warm in the microwave for 15 to 20 seconds.
  5. Spoon the beef mixture into the warm tortillas. Top with a spoonful of the pico de gallo and serve.

{TIP}

If you don’t have taco seasoning, combine 2 teaspoons each of chili powder and ground cumin.

Additional topping suggestions: shredded cheese, shredded carrots, diced avocado, hot sauce, mixed greens.
