Bowties with Arugula Pesto

Sure, you can buy pesto sauce at the store, but why not save money and impress your roommates by making your own? Pesto is traditionally made with basil, but this nut-free version is made with peppery arugula—a leafy green that is loaded with nutrients.

Makes: 6 servings

Serving size: 1⅓ cups

1lb (450g) uncooked bowtie pasta

5oz (140g) bag arugula

Juice of ½ lemon

2 garlic cloves

1 tsp kosher salt

½ cup olive oil

½ cup grated Parmesan cheese

  1. Place a large pot of salted water over medium heat. Bring to a boil and then add the pasta. Cook the pasta according to package directions.
  2. While the pasta is cooking, make the pesto by combining the arugula, lemon juice, garlic, kosher salt, and olive oil in a blender. Blend until smooth.
  3. When the pasta is cooked, drain and return it to the pot. Add the sauce and Parmesan, and gently toss to coat.
  4. Serve hot. Store in the fridge for up to 5 days.

{TIP}

Prefer a little more heat? Add a big pinch of red pepper flakes to the sauce.
