Lemon & Garlic Zucchini Noodles

This simple yet delicious flavor combination of lemon, garlic, and zucchini noodles adds freshness and zest to a side dish perfect for any main meal.

SERVING SIZE ½ cup

2 tbsp olive oil

2 tbsp salted butter

3 garlic cloves, crushed

3 large zucchini

2 tbsp freshly squeezed lemon juice

4 tbsp grated Parmesan cheese

¼ tsp sea salt

½ tsp ground black pepper

1. Set the air fryer temp to 360°F (180°C).

2. Spiralize the zucchini. Place the zucchini on a plate lined with paper towels. Use more paper towels to press down to remove all the excess liquid from the zucchini. Try to get them as dry as possible.

3. Place the olive oil, butter, and garlic on a baking pan. Place the pan in the fryer basket and cook until the garlic has become fragrant, about 3 minutes.

4. Remove the pan from the fryer basket and add the noodles, lemon juice, and Parmesan. Stir until the noodles are well coated.

5. Return the pan to the fryer basket and cook until the noodles are tender, about 1 minute more.

6. Remove the pan from the fryer basket and season the noodles with salt and pepper before serving.

Tips You can also replace the Parmesan with the same amount of nutritional yeast flakes and substitute the butter with more olive oil. This dish is best eaten fresh.
