This hot and creamy cereal features accents of cinnamon and vanilla, and is topped with sweet, fresh berries. Keto, gluten-free, and paleo-friendly, this satisfying warm porridge is ready in just 4 minutes!
8 tbsp unsalted and shelled raw sunflower seeds
10 tbsp almond flour
4 tbsp golden flaxseed meal
21⁄2 tbsp butter or ghee, melted
21⁄3 cups water
1 cup unsweetened almond milk
1⁄2 tsp vanilla extract
1⁄2 tsp ground cinnamon
4 tsp erythritol-oligosaccharide granular sweetener blend
2 cups mixed berries (blueberries, raspberries, or blackberries)
1 Add the sunflower seeds to a small food processor or blender. Pulse until a flourlike texture is achieved.
2 In a medium bowl, combine the sunflower meal, almond flour, and flaxseed meal. Mix until well combined.
3 Add the melted butter or ghee to the pot and then add the almond-flaxseed mixture and water. Stir until well combined.
4 Cover, lock the lid, and flip the steam release handle to the sealing position. Select Porridge (High) and set the cook time for 2 minutes
5 When the cook time is complete, quick release the pressure.
6 Open the lid and stir in the almond milk and vanilla extract. (If the porridge is too thick, add more water, 1 tbsp at a time, until the desired consistency is achieved.)
7 Spoon the porridge into serving bowls. Top each serving with 1⁄8 teaspoon cinnamon, 1 teaspoon sweetener, and 1⁄2 cup ofthe berries. Serve warm.
tip To make this recipe dairy-free, substitute 21⁄2 tbsp coconut oil for the butter.
