This simple side is lightly steamed and topped with a lovely drizzle of citrusy garlic butter and a touch of Parmesan. The Instant Pot steams asparagus perfectly al dente in a snap!
1lb (450g) fresh asparagus spears, cut in half and woody ends removed
2 tbsp butter
1 garlic clove, minced
2 tsp fresh lemon juice
11⁄2 tbsp shredded Parmesan cheese
1 Place the steam rack in the inner pot and add 1 cup water to the bottom of the pot. Place the asparagus spears on the rack.
2 Cover, lock the lid, and flip the steam release handle to the sealing position. Select Steam (High) and set the cook time for 2 minutes. When the cook time is complete, quick release the pressure.
3 Open the lid and carefully remove the steamer basket and asparagus spears from the pot. Set aside.
4 Carefully remove the inner pot from the base, drain and wipe dry with a paper towel, and then return the pot to the base.
5 Select Sauté (Normal). Once the pot is hot, add the butter and garlic. Sauté for 2 minutes or until the garlic becomes fragrant. Add the lemon juice, stir, and then press Cancel to turn off the pot.
6 Transfer the asparagus spears to a serving platter. Drizzle with the lemon garlic butter and sprinkle the Parmesan over top. Serve warm.
tip If you don’t have a steamer basket with legs, you can use an ovenproof bowl placed on top of the steam rack.
