GREEN BEANS

with Mushrooms and Bacon

These fresh, vibrant green beans and buttery glazed mushrooms are accented with smoky bacon and fragrant garlic. This simple yet elegant keto side is a wonderful accompaniment to any meal.


1lb (450g) fresh green beans, washed and trimmed

3 tbsp butter

1 garlic clove, minced

112 cup sliced fresh mushrooms

2 tsp tamari sauce

4 slices cooked bacon, crumbled

18 tsp ground black pepper

1 Place the green beans in the bottom of the inner pot and add just enough water to cover the beans.

2 Cover, lock the lid, and flip the steam release handle to the sealing position. Select Steam (High) and set the cook time for 2 minutes. When the cook time is complete, quick release the pressure.

3 Open the lid and transfer the beans to a colander to drain. Set aside.

4 Carefully remove the inner pot from the base, drain and wipe dry with a paper towel, and then return the pot to the base.

5 Select Sauté (Normal). Once the pot becomes hot, add the butter.

6 Once the butter is melted, add the garlic and mushrooms to the pot and sauté for 1 minute or until the mushrooms begin to soften.

7 Add the tamari sauce. Continue sautéing, stirring continuously, for 1 minute or until the mushrooms have fully absorbed the sauce.

8 Add the green beans and crumbled bacon to the pot. Sauté for 1 additional minute, stirring to coat the beans and bacon in the sauce.

9 Transfer the beans and mushrooms to a serving plate and season with the black pepper. Serve hot.

tip To make this recipe soy-free, substitute 2 tsp coconut aminos for the tamari sauce.
