Acknowledgments

To Amanda and Winnie, my editors, thank you for believing in this book from the beginning, and, more than that, for your commitment to me—as a writer and as a photographer. We have created (another) something truly beautiful together!

To Mary, my copyeditor, and Marissa, my art director, thank you for your attention to every detail and your commitment to make this book the absolute best it could be.

To Danny, thank you for your intense pickiness about food. You helped make this book better, tasting and providing feedback on every recipe and guaranteeing that if you liked it, almost anyone would. There were some intense weeks, with probably more quinoa and avocado than you would prefer to eat at one time, and yet you supported me gracefully. Thank you for your willingness to incorporate more superfoods into your diet and to eat more (delicious) vegetarian meals, all in the name of health.

To Babycakes, thank you for helping me design and color the front of this cookbook and taste test every single recipe! You are the reason I started thinking about food differently and why I fell in love with cooking. Thank you for challenging me daily to love Jesus more, to be compassionate toward others, and to focus on the things that really matter. You have a fire burning inside that I did not create, and I want to fan the flame, not extinguish it. I really can’t say I love you enough—I love you. I love you. I LOVE YOU!!! I want constantly to smother your neck with kisses, sing you a thousand “twinkle twinkles,” laugh until our bellies hurt, and celebrate who you become. You make my heart full.

To Mom, thank you for being my biggest cheerleader! Thanks for truly caring about every detail in this book as much as I do. I couldn’t have done it without you. I can’t wait to have you living close by so we can enjoy these recipes together, over a glass of wine (or two)!

To Dad, thank you for instilling in me a genuine passion and enthusiasm for good food, for teaching me the sky’s the limit, for equipping me with the “WIN—what’s important now” strategy so I could juggle writing a (second) book, raising a vibrant little girl, and working part time successfully. Last but not least, thank you for telling me daily how proud you are of me. It means the world to me.

To Shawna, God put you in my life at just the right time! A friend who is totally obsessed with cookbooks, adores cooking, and truly celebrates and loves talking about all things food. I couldn’t have done it without you. Thank you for your support, encouragement, and overall enthusiasm for this project.

To my Nosh and Nourish blog readers and taste testers, please accept my utmost thanks for the support, enthusiasm, and excitement you’ve given me over the past four years. Thank you for your honest feedback, your thousand “thank yous” and “OMG… so good”s, your enthusiasm for what’s next, and your habit of reading my blog day after day. To know my recipes help you live happier, healthier lives means the world to me. You are why I am here today, finishing the acknowledgments for my second cookbook! I can’t wait for it to be in your hands and in your kitchens!
