This healthy twist on a classic will never disappoint—even if it leaves you a sloppy mess. For the same amount of protein, bison is up to 30% leaner than traditional beef. It also has a healthier fatty acid composition because of the diet of the American buffalo. So enjoy this guilt-free dish!

BISON SLOPPY JOES

Makes: 4 servings

Serving size: 4oz (110g) meat

Prep time: 15 minutes

Cook time: 40 minutes

 

INGREDIENTS

1 tbsp extra virgin olive oil

12 medium white onion, diced

5 garlic cloves, minced

1 red or green bell pepper, diced

1lb (450g) lean ground bison (85%)

1 cup ketchup

112 tbsp tomato paste

2 tsp maple syrup

1 tsp Worcestershire sauce

1 tsp liquid smoke

salt and freshly ground black pepper

4 Kaiser rolls

DIRECTIONS

1 In a deep saucepan on the stovetop over medium heat, heat the olive oil until shimmering. Add the onion, garlic, and bell pepper. Cook until the vegetables begin to soften, about 5 to 7 minutes.

2 Add the bison and cook until brown, about 2 minutes, stirring often.

3 Stir in the ketchup, tomato paste, maple syrup, Worcestershire sauce, and liquid smoke. Season with salt and pepper. Let simmer for 25 to 30 minutes. (Add a little water if the meat begins to look dry.)

4 Preheat the oven to broil. Open the rolls, place on a baking pan, and broil for 45 to 70 seconds.

5 Remove the rolls from the oven. Spoon the sloppy joe mixture onto one half of each roll, add any favorite toppings, and top with the other half of each roll. Serve immediately.

CHANGE IT UP

I usually serve this with mixed vegetables to catch the drippings from the sandwich, making for a delicious ending to the meal.
