CURRY & CAYENNE COCONUT SHRIMP

Makes: 4 servings

Serving size: 4oz (110g)

Prep time: 10 minutes

Cook time: 5 minutes

 

INGREDIENTS

1lb (450g) shrimp, peeled and deveined

1 tbsp curry powder

1 tsp ground cayenne pepper

1 tsp paprika

salt and freshly ground black pepper

2 tbsp coconut oil

DIRECTIONS

1 In a bowl, combine the shrimp, curry powder, cayenne, and paprika. Season with salt and pepper, tossing to coat.

2 In a cast iron skillet on the stovetop over medium-high heat, heat the coconut oil until shimmering. Add the shrimp and cook until firm, about 212 minutes per side.

3 Remove the shrimp from the skillet and serve immediately.

CHANGE IT UP

Pair this with stir-fry vegetables and jasmine rice for an Asian-inspired meal.
