MUSHROOM & ONION–SLATHERED SKIRT STEAK

Makes: 4 servings

INGREDIENTS

4 skirt steaks, about 4oz (110g) each

kosher salt and freshly ground black pepper

2 tbsp unsalted butter, divided

8oz (225g) sliced mushrooms

1 medium yellow onion, halved and sliced

3 tbsp Worcestershire sauce

DIRECTIONS

1 Preheat the oven to broil. Season the steak with salt and pepper.

2 In a deep-dish pan, place the steaks. Top each with 14 tablespoon of butter. Broil until the steaks reach your desired doneness:

  • Rare: 3 minutes per side
  • Medium rare: 4 minutes first side, 3 minutes after turning
  • Medium well: 5 minutes first side, 3 minutes after turning
  • Well done: 5 minutes first side, 5 minutes after turning

3 In a saucepan on the stovetop over medium heat, sauté the mushrooms, onion, and the remaining 1 tablespoon of butter until the onion becomes soft and translucent, about 5 to 7 minutes. Add the Worcestershire sauce, tossing to combine.

4 Remove the steak from the oven and slather each steak with an equal amount of mushrooms and onion. Serve immediately.

CHANGE IT UP

This goes great with Grilled Balsamic Asparagus or Charred Broccoli.
