This lightly breaded and minimally fried cod with fresh lemon and parsley is a great dish for making a fish lover out of anyone. The crispy, lemony flavor combined with the soft, flaky, and almost buttery flesh of the cod makes this a meal you’ll want to put on weekly rotation.

PANKO-CRUSTED BAKED COD

Makes: 3 servings

Serving size: 1 fillet

Prep time: 10 minutes

Cook time: 12 minutes

 

INGREDIENTS

1 large egg

13 cup panko breadcrumbs

1 tsp finely chopped fresh parsley

1 tsp minced garlic

salt and freshly ground black pepper

3 cod fillets, about 6oz (170g) each

1 lemon, sliced

DIRECTIONS

1 Preheat the oven to 425°F (218°C). Spray a baking pan with nonstick cooking spray.

2 In a bowl, whisk the egg and pour into a deep dish.

3 In a separate deep dish, mix the breadcrumbs, parsley, and garlic. Season with salt and pepper. Dip the cod fillets in the egg until coated and lightly bread with the panko.

4 Place the fish on the pan and top each with a lemon slice. Bake until browned and the fish is cooked through, about 12 minutes.

5 Remove the cod from the oven and serve immediately.

CHANGE IT UP

This is also great for fish tacos. Cut into thinner pieces and top with red cabbage, pico de gallo, and avocado.
