Fighters I work with love these meatballs because they make you feel like you’re “cheating” when you’re not. Turkey is lower in fat (especially saturated fat) than other poultry—but not in flavor. I hope you enjoy this healthy and fit twist on my Italian grandmother’s meatball recipe.

ITALIAN TURKEY MEATBALLS

Makes: 5 servings

Serving size: 4 meatballs

Prep time: 10 minutes

Cook time: 30 minutes

 

INGREDIENTS

2lb (1kg) lean ground turkey (99%)

1 tsp minced garlic

2 large eggs

1 cup breadcrumbs

1 tbsp Italian seasoning

14 cup grated Parmesan cheese

13 cup chopped fresh parsley

2 tbsp chopped fresh basil

salt and freshly ground black pepper

DIRECTIONS

1 Preheat the oven to 350°F (177°C).

2 In a bowl, combine the turkey, garlic, eggs, breadcrumbs, Italian seasoning, cheese, parsley, and basil. Season with salt and pepper.

3 Form the mixture into 20 equal-sized meatballs and place on a baking pan lined with parchment paper. Bake until no longer pink inside, about 28 to 30 minutes, checking occasionally with a toothpick.

4 Remove the meatballs from the oven and serve immediately.

CHANGE IT UP

Serve these with pasta and sauce, in hoagies, or with Spicy Zoodles.
