GARLIC & ROSEMARY ROASTED POTATOES

INGREDIENTS

112lb (680g) small red or white potatoes, halved or quartered

18 cup extra virgin olive oil

1 tsp coarse salt

1 tbsp minced garlic

1 tsp paprika

2 tbsp chopped fresh rosemary leaves

freshly ground black pepper

DIRECTIONS

1 Preheat the oven to 400°F (204°C).

2 In a bowl, combine the potatoes, olive oil, salt, garlic, paprika, and rosemary. Season with pepper and toss until well coated.

3 Spread the potato mixture onto a baking pan and roast until browned and crisp, about 1 hour. Flip periodically to ensure even browning.

4 Remove the potatoes from the oven and serve immediately.
