These sliders are a great way to introduce bison to nonbelievers. People assume bison is gamey, but when it’s cooked properly, you can’t tell the difference from traditional beef, although your gut will thank you because bison is 30% leaner for the same amount of protein than beef!

BISON SLIDERS

Makes: 8 sliders

Serving size: 2 sliders

Prep time: 30 minutes

Cook time: 15 minutes

 

INGREDIENTS

12oz (340g) lean ground bison (85%)

1 large egg

12 cup oat bran

12 cup finely diced white onion

1 tsp finely diced garlic

12 tsp salt

12 tsp ground black pepper

8 cracked wheat slider buns

4 slices sharp Cheddar cheese

1 medium tomato, sliced

1 medium red onion, sliced

4 dill cocktail pickles, sliced

4 tsp ketchup

4 tsp Dijon mustard

DIRECTIONS

1 Preheat the grill to medium.

2 In a bowl, combine the bison, egg, oat bran, onion, garlic, salt, and pepper. Shape the mixture into 8 patties, place on the grill, and cook until still slightly pink in the middle, about 5 minutes per side.

3 Cut each slice of cheese in half and place one on each patty for the last minute of cooking.

4 Remove the patties from the grill and place on buns. Add an equal amount of tomato slices, onion slices, pickle slices, ketchup, and mustard to each. Skewer with cocktail toothpicks and serve immediately.

CHANGE IT UP

Try this with venison, which is even leaner than bison.
