The main risk could be having limited visibility on a project. If you don't have time to interview all the different stakeholders, that means that you don't have all the requirements (and constraints) and you may make too many assumptions based on uncertain information.
A lousy timeline during project implementation could be another risk; maybe you spend too much time during the PoC, or define a design so sophisticated that the time to implement the entire solution does not match the required time to market.
