These CBD-infused cocoa bites do not require baking and are ready in just a few minutes. With their rich chocolate flavor and pop of warming spices, they make a simple and satisfying snack.
1⁄2 cup (80g) almond flour
1⁄4 cup (40g) maca root powder
1 tbsp + 1 tsp (8g) ground ginger
1⁄4 tsp (.5g) ground cardamom
dash of cayenne
1 tsp (5ml) vanilla extract
1⁄4 cup (80g) sugar or coconut sugar
1⁄4 cup (65g) cocoa powder
3⁄8 cup + 1 tbsp (104ml) coconut oil, softened
12 servings of CBD oil, but no more than 1 tbsp (15ml) total
powdered sugar, to coat
1. In a medium bowl, combine the almond flour, maca powder, ginger, cardamom, and cayenne. Add the vanilla and mix well. Add the sugar and cocoa and thoroughly combine. Set aside.
2. In a small bowl, stir together the softened coconut oil and the CBD oil until thoroughly combined.
3. Using a spatula, scrape the CBD-infused coconut oil into the bowl with the dry ingredients. Mix thoroughly until you have a dough that can be rolled into balls.
4. Line a plate with parchment paper. Roll the dough into 12 11⁄2-inch (3.8-cm) balls and place on the parchment paper. Refrigerate for 20 minutes. The bites should be firm when removed from the refrigerator.
5. Prepare a small bowl with powdered sugar and roll the bites until well coated. Enjoy immediately or store in an airtight container in the refrigerator. Consume within 1 month for best flavor.
