Italian Deli Combo

Skip the overpriced deli and make this healthier version of a classic sandwich. Look for pre-sliced salami in the refrigerated section of the grocery store, it will last longer than the sliced-to-order variety from the deli counter.

Makes: 1 serving

Serving size: 1 sandwich

2 slices whole grain bread

2 tsp Dijon mustard

3oz (85g) sliced salami

½ cup mixed greens

1 slice provolone cheese

  1. Lightly toast the bread slices and then spread a thin layer of mustard over one side of each slice.
  2. Layer the salami on one slice of toast and then top with the greens and cheese. Top the sandwich with the second slice of toast.
  3. Cut the sandwich in half and enjoy promptly or wrap it up to take it to go.

{TIP}

If you’re not a fan of mustard, you can swap it out for mayo or a drizzle of balsamic vinaigrette salad dressing.
