Post-Workout Burrito

Effective post-workout recovery requires protein for fatigued muscles, healthy carbs to replenish depleted energy reserves, and vegetables or fruit to combat inflammation. Now you can get it all rolled into a delicious burrito!

Makes: 1 serving

Serving size: 1 burrito

2 large eggs

½ cup baby spinach leaves

¼ cup chopped green bell pepper

1 slice American cheese

8-inch (20cm) flour tortilla

  1. Preheat a large nonstick skillet over medium-high heat.
  2. Spray the skillet with nonstick cooking spray and then crack the eggs into the pan. Cook for 2 to 3 minutes and then flip the eggs. Add the spinach, bell pepper, and cheese, and continue cooking until the cheese is melted and the eggs are set.
  3. Lay the tortilla on a flat surface and place the egg mixture in the center. Fold in the sides and then roll the ends into a burrito.
  4. Cut the burrito in half and serve promptly or wrap in aluminum foil to take on the go. Store in the fridge for up to 1 day.

{TIP}

This recipe can be tweaked in countless ways, using whatever cheese and veggies you have on hand. Try substituting cooked kale or diced, cooked potato or sweet potato. Don’t be afraid to mix it up!
