No-Lettuce Chopped Salad

There’s no law that says a salad must have lettuce! This mixture of pantry staples is a high-protein alternative to the typical chopped salad, and it will last much longer in the fridge. It also has 8 grams of hunger-fighting fiber per serving. That’s one third of your daily fiber requirement!

PER SERVING 185 CALORIES     TOTAL TIME 10 MINUTES     GROCERIES 7 INGREDIENTS

Makes: 5 servings

Serving size: 1 cup

15oz (420g) can chickpeas, rinsed and drained

2 medium red bell peppers, seeded and roughly chopped

6oz (170g) can black olives, drained

1 English cucumber, diced

¼ cup store-bought balsamic vinaigrette salad dressing

½ tsp kosher salt

¼ tsp black pepper

  1. Combine the chickpeas, bell peppers, olives, and cucumber in a large bowl.
  2. Pour the dressing over the top of the salad, season with the kosher salt and black pepper, and toss gently to combine. Serve promptly or store in the fridge for up to 5 days.

{TIP}

You can swap cherry tomatoes for the red bell peppers if they’re in season.
