Veggie Pizza Burger

A plain old plant-based burger gets a pizza makeover, turning it into a super-satisfying (thank you, fiber) meal with even more veggies, thanks to the addition of tomato sauce and fresh spinach.

PER SERVING 336 CALORIES     TOTAL TIME 15 MINUTES     GROCERIES 5 INGREDIENTS

Makes: 1 serving

Serving size: 1 burger

1 veggie burger (I like Dr. Praeger’s brand)

2 tbsp marinara sauce

2 tbsp shredded part-skim mozzarella cheese

1 whole grain bun, toasted

¼ cup baby spinach

  1. Preheat a large nonstick skillet over medium heat. Place the veggie burger in the skillet and cook for 3 to 4 minutes per side.
  2. Leave the burger in the skillet and top with the marinara sauce and cheese. Cook for an additional 2 minutes or until the cheese is melted.
  3. Place the burger on the roll and top with the spinach and the crown of the bun. Serve promptly.

{TIP}

For even more protein, substitute a slice of fresh mozzarella for the shredded mozzarella cheese. It has just as much protein as a chicken breast.
