Mini Zucchini Pizza Bites

Now you can get all the yummy goodness of pizza, while still eating your vegetables! The zucchini slices are the “crusts” in these addictive little pizza bites. Mom would approve!

Makes: 4 servings

Serving size: 4 bites

1 large zucchini (about 4-inches in width), cut into 16 ½-inch (1.25cm) slices

1 cup marinara sauce

1 cup shredded part-skim mozzarella cheese

8 pepperoni slices, cut into quarters

2 tsp dried oregano

  1. Preheat the oven to 425°F (220°C).
  2. Place the zucchini slices on a large parchment paper-lined baking sheet. Top each slice with 1 tablespoon of the marinara, 1 tablespoon of the mozzarella, and 2 pieces of the pepperoni. Sprinkle the oregano over the slices.
  3. Bake for 10 to 15 minutes or until the cheese is melted and bubbly. Remove the bites from the oven and allow to cool slightly before serving. Store in the fridge for up to 5 days.

{TIP}

If you don't have zucchini, this recipe can also be made with yellow squash or eggplant.
