BBQ Chicken Pizza

This nontraditional spin on pizza makes for a quick, easy, and healthy weeknight meal. Have a late class? Make this pizza ahead of time, keep it in the fridge, and simply pop it in the oven when you get home. Dinner will be ready in less than 20 minutes!

Makes: 4 servings

Serving size: 2 slices

12-inch (30cm) pre-baked, whole wheat pizza crust (or 4 whole wheat pita breads)

½ cup barbeque sauce

2 cups sliced grilled chicken breast

1 cup shredded cheddar cheese

1 medium bell pepper (any variety), seeded and sliced

  1. Preheat the oven to 400°F (205°C).
  2. Place the pizza crust on a large baking sheet and top with the barbeque sauce, followed by the chicken, cheese, and bell pepper slices.
  3. Bake for 15–20 minutes or until the cheese is melted and bubbly, and the crust is lightly browned. Cut into 8 equal-sized slices and serve. Store in the fridge for up to 3 days.

{TIP}

To boost the nutrition and antioxidants, top with sliced onions or mushrooms before baking, and then sprinkle chopped cilantro over the top before serving.
